@CAW wow, that is a hefty bunch of questions. Let's see if I can catch everyone.
There is quite a list of larger and smaller changes in the stock applications. Opera is now replaced with a browser based on the Mozilla technologies that also power Firefox. This means that we get Full AJAX support and comprehensive web compatibility overall. Support for Opera will not continue at all anymore.
The other larger changes are of course the pre-installed map application on both N810 and N800, new codecs for media player, performance improvements in flash video (you need to see how youtube performs now), a lot of UI changes to improve the visual appearance as well as make the UI more usable with your fingers, SIP support, Bluetooth headset support, and I'm most likely forgetting something. One additional thing are the improved use-times in both online and offline use-cases.
The OS is functionally the same for both N810 and N800. The differences come from the hardware, but the stock applications have the same features on both devices. It is just as you would expect from an Operating System.
On the exact schedule of releasing the software for N800, I don't have the details for you right now.
The bluetooth headset support will work with applications that are able to support headsets which would count in Skype.
The chip used for GPS is something I can't comment on.

@CAW when updating your N800 to the new release, you will unfortunately have to re-install your applications. I know this is quite a burden but at this stage it cannot be avoided.
In the future we are working on improving the process of updating your devices with our releases, so that you really wouldn't have to go through the whole works everytime we release something.

@darla the media player supports some new codecs in the new release. Windows media video is now supported as well as H.264.
I'm really excited about both of these additions, as there is a lot of content around with these codecs. H.264 translates into the ability to for example play m4v files.

thecreativelife, i think the media support has taken a big step forward in the OS 2008 release. Why? We added Windows media video, which obviously is a really big improvement in web comptability and we added H.264 support.
For many Youtube is a big part of the media experience, and worked hard to improve that performance.
